According to the Wikipedia article it is safe to use Teflon as long as you don't heat it above 460 degrees Fahrenheit. Should I still be concerned when using it below that temp?

Wikipedia is a great place to get a quick scan on a subject but in on way shape or form is the authoritative body on any subject. Teflon and all other non-stick surfaces, will volatilize fluoride ions if you heat it at. The higher the temperature the more ions are released.
