Description: finely chop an onion(+crushed garlic if to taste)-make it sweat in a pan! brown some mince, put both together if you didn't do them in the same pan to start with add finely chopped red and green chillies (avoid seeds!) add a tin of finely chopped tomatoes and some tomato puree. add a little chilli powder, ground cumin, coriander and a splash of worcester sauce. open a bottle of wine, drink it, but if the mood takes you splash some into the mix as well ;)(I skipped this part :( was on a no alcohol day!) simmer, longer the better. add chilli beans towards end of cooking time, simmer lots more. serve with garlic bread and salad (my fave salad= red peppers, cucumber, cherry tomato, red onion, feta cheese, (and on this occasion, carrots), sprinkle with oregano and add a drizzle of olive oil. or, to cut a long story short- chuck a load of stuff in a pan and hope for the best ;) |
